They haven't called it unrealized capital gains but small farmers in my area have been forced for years to sell their family farms to builders due to rising taxes. They likely made decent money from the sale but didn't want to sell and move. I know...progress. But these farms had been in their families for decades.

It's not only seed oils, dyes and pesticides. They can add other substances use to make the food look nicer or improve harvest amounts. Almost all oats (outside the US) are sprayed with Chlormequat which makes their stalks shorter reducing height and bending over resulting in more yield. Chlormequat is illegal in the US but not in other countries. A lot of oats are imported into the US from those countries. Technically a pesticide but more a yield enhancer.
