Offshore fishing would be an all day event. To offshore fish you need to leave really early in the morning in order to get out to the gulfstream. Inshore fishing is a great option to and you can expect to catch flounder, sea trout, red-fish etc. I'll ask around for some good guides and get back to this thread shortly.
As far as history stuff goes I would suggest a walking tour and / or horse and buggy ride. Walking is really the best way to see the city as the streets are kind of narrow and parking is kind of tough.

You can check out Ft Sumter, where the war of northern aggression started, but you have to take a ferry ride to get there.

I usually recommend that people go to see Ft Moultrie instead of Ft Sumter, which you can drive to, and is pretty much the same thing as Ft Sumter just in a more accessible location. Ft Moultrie is on Sullivans island which is a cool beach town and great spot to go to the beach for the day.
