My BIL retired from a large hotel chain as food/beverage director. He tries to make our meals like a smorgasbord with several items from each food group. We always take home doggie boxes.I love deep fried turkey! It takes some work, and the costs have gone up a lot but man..thats some good stuff!

I'm going to cook my turkey in a steam oven, so it usually only takes between an hour and an hour and a half. Keeps it really moist but still browns the outside to a good crispness. Our turkey gets injected with cajun butter and fried 3.5 minutes per pound. Always crispy skin and very moist meat.
