What was your ham technique

Smoker 2 1/2 hrs @ 275 with a mix of cherry and applewood.

Itā€™s called twice smoked, so your just adding layers of flavor to an already smoked shank.

The drip pan has apple juice, pineapple chunks, brown sugar, bourbon and a honey glaze that dripped in there.

Drain all the fat and smoker gunk outta there and add it to the container after u chop her upā€¦.
