What was your ham technique

Sensational.... I'll fly you in just to cook that for us!!!!Smoker 2 1/2 hrs @ 275 with a mix of cherry and applewood.
It’s called twice smoked, so your just adding layers of flavor to an already smoked shank.
The drip pan has apple juice, pineapple chunks, brown sugar, bourbon and a honey glaze that dripped in there.
Drain all the fat and smoker gunk outta there and add it to the container after u chop her up….
