CO, or carbon monoxide is an unstable compound that is always searching for one more Oxygen atom to create stable CO2.
This is why CO is a killer because if breathed, it gets into your blood stream and removes the oxygen from your blood before your cells can use the oxygen and your cells suffocate.
As far as using CO to preserve meats, it is fine. The CO bonds with free oxygen in the air and prevents the discoloration of meat. The meat discolors because of oxidation. All red blooded meats have iron in them and oxygen loves iron. The meat rusts.
Oxidation of the iron in meats causes discoloration but is not harmful to consume, nor change the taste. Ie: dry aged beef loses the red color and exposed areas turn grey.
