Whats your method? DO you brine it etc?
Yeah I let it sit in brine for 24 hours, put some dry rub on it and smoked it on 300 until it got to 170 degrees.
Took about 7 hours of smoking
You for hire?
I think I was smoking at a little higher temp last year. I think 375 for about 2.5 hours if I recall correctly.
