8 minutes total on grill at 400. Rare in the middle, medium rare on the ends . Stick of Kilkenny Irish butter and 4 oz of blue cheese crumbles. S&P and some Thyme: simmer for a half hour on low. Add some fresh whole crumbles if you’d like
