Been doing this for years. I line a rimmed baking sheet, sides and all, with tin foil. Spray with cooking spray, then lay out bacon. Put the bacon in a cold oven then set to 400. Usually takes 20 minutes or so.
If you want truly remarkable, flat, evenly rendered bacon you put a smaller sized cookie sheet on top of the bacon. The negative to this is that you have to wash the top cookie sheet, but the bacon comes out incredible. After you’re done, simply let the grease cool then carefully wad up the tin foil in a ball and throw away. The bottom sheet won’t even need washed. Or, you can keep the grease.
