I've been dogging it on one of my projects all summer long and upon completion, I decided to do a TriTip.

Pissed because asshole butcher cut part off. Fvxking moron.

Santa Maria style w chimichurri sauce done over Jealous Devil lump charcoal.

40 min at 275°. Pull and let rest. Fire coal to 500°+ and a few min to char it. Rest another 15.

Be sure to cut across grain. TT has 2 runs of grain lines.

Shit cuts like butter.....
