Don’t eat the meat on the hooves. The ankle area has some meat on it. It’s pickled so it tasted like pickled jerky. JMHO

No. Eat it all except around the two hooves. It’s sinewy and very vinegary. The skin is tender. Try one. If you don’t like it throw it to the dogs. They’ll love it
